Harissa Eggplant Hummus Bowl

- ingredients -

  • 4 – 4 oz Sliced Eggplant
  • 2 tsp Extra Virgin Olive Oil
  • 1 Lemon, squeezed
  • 2 tbsp Harissa sauce
  • 1 cup Grape Tomato, blistered
  • 1 cup Roasted Carrots
  • 1 cup Chickpeas, heated
  • Salt and Black Pepper to taste
  • 16 oz Sabra Classic Hummus
  • 4 oz Basil Pesto
  • 1/4 cup Feta Crumbled
  • 1/4 cup Fresh Basil Leaves

- directions -

  1. Marinate eggplant in extra virgin olive oil, lemon juice and harissa sauce
  2. Grill eggplant for 3-4 minutes on each side until cooked through
  3. Heat blistered tomatoes, roasted carrots and chickpeas and season with salt and pepper
  4. Spoon 4 oz of Sabra Classic Hummus onto each serving bowl. Swirl the hummus, using the back of the spoon, to create a bowl of hummus inside of the serving bowl
  5. Top hummus with eggplant, tomatoes, carrots and chickpeas
  6. Garnish with basil pesto, feta and fresh basil leaves
