Churrasco Beef Chimichurri Hummus Bowl

- ingredients -

  • 4 – 4 oz Flank Steak
  • 2 tbsp Extra Virgin Olive Oil
  • 1 Lemon, squeezed
  • 2 tbsp Chimichurri sauce
  • 2 tbsp Extra Virgin Olive oil
  • 1 cup Grape Tomato, halves
  • 2 cups Baby Arugula
  • Salt and Black Pepper to taste
  • 16 oz Sabra Classic Hummus
  • 4 oz Chimichurri sauce
  • 1/4 cup Feta Crumbled
  • 1 cup Fried Plantain Chips

- directions -

  1. Marinate flank steak in extra virgin olive oil, lemon juice and chimichurri sauce
  2. Grill flank steak for 3-4 minutes on each side until cooked to desired temperature
  3. Toss tomatoes and baby arugula in extra virgin olive oil and season with salt and pepper
  4. Spoon 4 oz of Sabra Classic Hummus onto each serving bowl. Swirl the hummus, using the back of the spoon, to create a bowl of hummus inside of the serving bowl
  5. Top hummus with sliced flank steak, arugula salad, 1 oz chimichurri, 1 tablespoon feta and 1/4 cup plantain chips
