Caprese Chicken Hummus Bowl

- ingredients -

  • 4 – 4 oz Chicken Breast
  • 2 tbsp Extra Virgin Olive Oil
  • 1 lemon, squeezed
  • 2 cups Grape Tomatoes, quartered
  • 2 tbsp Diced Red Onions
  • 1 tsp Minced Garlic
  • 2 tbsp Extra Virgin Olive oil
  • 2 tbsp Basil, Chiffonade
  • 2 tbsp Balsamic Vinegar
  • Salt and Black Pepper to taste
  • 16 oz Sabra Roasted Red Pepper Hummus
  • Optional Garnishes: Extra Virgin Olive Oil & Fresh Basil

  1. Marinate chicken in extra virgin olive oil and lemon juice for 30 minutes
  2. Grill chicken for 3 minutes on each side until cooked thoroughly
  3. Combine, grape tomatoes, red onions, garlic, extra virgin olive oil, basil and balsamic vinegar. Season with salt and pepper
  4. Spoon 4 oz of Sabra Classic Hummus onto each serving bowl. Swirl the hummus, using the back of the spoon, to create a bowl of hummus inside of the serving bowl
  5. Top hummus with chicken and ¼ of caprese salad
  6. Garnish with extra virgin olive oil and fresh basil
